Texas Caviar

2 cans black-eyed peas
1 can yellow corn (drain all vegetables)
½ onion diced
½ red pepper diced
bell or jalapeno peppers diced
2 or 3 tomatoes diced (Romas work well)
1 large jar diced pimentos

Mix. Pour a bottle Italian dressing over.  Let sit.  Serve with tortilla chips.
You can vary amounts accd. to taste or size of serving needed.  Avocados added at the last are also very good.
