| Zucchini Bread 1 cup cooking oil 2 cups sugar 3 eggs 2 cups flour ¼ teaspoon baking powder 2 teaspoons soda 1 teaspoon salt 3 teaspoons cinnamon 2 cups grated zucchini 2 teaspoons vanilla extract 1 cup nuts (optional) Combine oil and sugar in large mixing bowl, blend well. Add eggs, beat well. Sift dry ingredients to egg mixture alternating with zucchini, beating well after each addition. Stir in nuts and vanilla. Pour into 2 greased bread pans.
